Directions: Put 4 cups of room temperature water into a pot, sprinkle vegetable portion of pack into water and bring this to a full boil. Add gnocchi and boil 7 minutes. Turn down to medium-low heat and whisk in the rest of the bag. Soup will thicken as it simmers for just a few minutes. Try it with a crusty sourdough and a Caesar salad! Enjoy and be nourished!

Warm and creamy, savory and comforting, this soup is flecked with ample bits of spinach and carrots and tastes like something your grandmother would serve you on a cold winter’s day (assuming your grandmother was an expert cook). The directions call for 4+ cups of water – I recommend a full 5 cups because it thickens up very nicely.
